Ingredients

  • 1 ½ cups flour
  • 1 ½ cups old fashioned oats
  • 1 cup sweetened coconut flakes
  • 1 teaspoon cinnamon ground
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter room temperature
  • 1 cup brown sugar
  • cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup Ghirardelli Intense Dark Chocolate Bar (86% Cacao bar) Chopped into small chunks)
  • ½ cup Raisins
  • ½ cup walnuts toasted and coarsely chopped

Instructions

  • Preheat the oven to 350 degrees:
  • Prepare the walnuts: Place them (whole or pieces) into a non-stick frying pan. Place the burner on medium high heat and toast until lightly toasted and fragrant. Put them aside allowing them to cool; Once they have cooled, coarsely chop them .
  • In a medium bowl, whisk together the flours, oats, coconut, cinnamon, baking soda and salt. Set aside.
  • In the bowl of a stand mixer use the paddle attachment to beat the butter and sugars on medium speed until light and smooth/fluffy (roughly 3 minutes). Scrape down the sides of the bowl and add the eggs on at a time, beating well after each. Add the vanilla and mix on medium speed to incorporate.
  • Turn the mixer down to low speed and gradually add the dry ingredients. Mix until combined. Remove the mixing bowl from the mixer stand and add the chocolate, cranberries and chopped nuts. Use your hands to combine to ensure they are evenly distributed.
  • Add parchment paper to your baking sheets and drop a tablespoon portion of the dough for each cookie spacing them about 2 inches apart.
  • Bake in the oven for about 13-15 minutes, until lightly golden brown around the edges.
  • Allow the cookies to cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely.
