Stuffed Pork Chops with Cranberry and Apple Stuffing

The combination of the apples and the cranberries will let you forget all about the sausage that will be missing from this stuffing.

  • 2 boneless pork chops thick cut
  • 1 tablespoon butter
  • 3 stalks celery chopped
  • 1 medium onion chopped
  • ½ cup honey crisp apple chopped
  • ½ tablespoon thyme
  • ¼ cup dried cranberries room temperature
  • ½ tsp olive oil
  • 3 tbsp dried sherry
  • ½ cup chicken broth
  • ½ tsp crushed rosemary
  • 1 tbsp fresh parsley chopped
  • ground pepper to taste


  • Preheat oven to 375 degrees F.

Prepare Apple Cranberry Stuffing

  • In a saute pan or skillet on medium heat, melt the butter and saute onion and celery until softened; about 15 minutes. Add the apples, thyme, rosemary, parsley, salt and pepper and cook for another 5 minutes. Finally add the cranberries and blend into the mixture.
  • Place the celery, onion, cranberry and apple mixture in a bowl and mix in the breadcrumbs, one egg, chicken broth and vermouth. Stuffing should be moist once all liquid has been added and combined.

Prepare Pork Chops

  • Butterfly the pork chops by slicing them parallel to the plane of the chop from the fat side. Leave approximately 1/4 inch as shown in the picture to form a large pocket.
  • Season the inside of the chops with salt, pepper and rosemary. Stuff each pork chop with about 2 to 3 tablespoons of the stuffing mixture. Feel free to use your hands to pack the stuffing into the pocket.
  • Place the chops on a shallow baking dish or cookie sheet. Season the outside of the chops with rosemary, salt and pepper. Bake for 45 minutes or until an instant thermometer reads 145 degrees.
